garlic, minced
diced green chilies
ground cumin
dried oregano
smoked paprika
chili powder
Salt and pepper
chicken broth
corn kernels (fresh or frozen)
Chopped fresh cilantro for garnish
Grated Monterey Jack cheese for topping

  1. In a large pot, brown the ground turkey over medium heat until fully cooked. Drain excess fat if needed.

  2. Add diced onion and minced garlic to the pot. Sauté until the onion is soft and translucent.

  3. Stir in the diced green chilies, ground cumin, dried oregano, smoked paprika, chili powder, salt, and pepper. Cook for an additional 2-3 minutes to let the spices release their flavors.

  4. Pour in the chicken broth and bring the mixture to a simmer. Add the drained white beans and corn kernels. Allow the chili to simmer for about 15-20 minutes, allowing the flavors to meld.

  5. Just before serving, squeeze in the lime juice for a bright, citrusy kick.

  6. Ladle the chili into bowls and garnish with chopped fresh cilantro and grated Monterey Jack cheese.
