Walt’s Wild Frontier Chili

Directions
1 HEAT
Heat a large pot on the stovetop over medium-high heat. Add ground bison and cook until browned, about 8-10 minutes. Once it’s cooked through, remove ground bison from the pot and drain the fat on a paper towel-lined plate or in a colander. Set ground bison aside.
2 ADD
Add butter to the pot. Once it is hot, add the onions and cook for at least 10 minutes (or until starting to caramelize).
3 ADD
Add spices (chili powder, cumin, paprika, salt and black pepper) and garlic. Cook for one additional minute.
4 COOK
Deglaze the pot with a little bit of your beef broth, about ¼ cup. Add green peppers and cook until tender, about 6 more minutes.
5 ADD
Add ground bison back to the pot along with all of your other ingredients (the rest of beef broth, tomato paste, diced tomatoes, brown sugar, chipotle chilis in adobo sauce and chili beans).
6 BOIL
Bring to a boil, then reduce heat to low and simmer for 30-40 minutes.
7 TOP
Top with cheddar cheese, sour cream, sliced avocado and green onions and serve with tortilla chips.
