Vino Beef Chili Fiesta

Directions
- Heat olive oil in a large pot over medium heat. Add onion, garlic, and bell pepper. Cook until vegetables are softened, about 5 minutes.
- Add ground beef to the pot. Cook, breaking up the meat with a spoon, until browned and cooked through, about 5-7 minutes.
- Stir in diced tomatoes, kidney beans, black beans, tomato paste, red wine, chili powder, cumin, paprika, salt, and pepper.
- Bring the chili to a simmer. Reduce heat to low, cover, and let it simmer for about 30 minutes, stirring occasionally.
- Taste and adjust seasoning if needed. Serve hot, topped with shredded cheese, sour cream, and green onions if desired.
