Vegie-Bird Chili

"I came across this recipe when I was limiting red meat and had to have extra vegetables due to a diet. I always glance at a recipe then do my own thing. You can substitute or leave out whatever and it always comes out perfect. I am not a bean fan but tolerate refried black beans. I have made this recipe without refried black beans and with and it still comes out delicious."

Large Sweet onion, diced
Celery, Chopped Fine
Green Pepper, de-seeded & diced
Avocado Oil or EVOO
30 oz. can Crushed Tomatoes
30 oz. can Diced Petit Tomatoes & juice
Tomato Paste
Crushed garlic cloves
4.5 oz. can Canned Green Chilis with juice
Sweet Potato, Peeled & diced
Zucchini, de-seeded & diced
Yellow Summer squash, de-seeded & diced
Jalipino, seeded and chopped
Chili Powder
Garlic powder
Onion Powder
Ground Cumin
Crushed Red Pepper Flakes
15 oz. can Opt. Refried Black Beans, Low Fat
Chicken Broth, Low Sodium
Any other Veggie you wish to add
Salt and Pepper
Toppings (Cilantro, Shredded Cheese, Avocado, Sour Cream, Green Onions)

Directions

  • PREP: Chop all veggies & open all your cans.  (If using sweet potatoes, put them in water so they don’t brown.)
  • In a large Dutch oven, brown your chicken Meat.  When done, put it on a plate or use the underside of your Dutch oven lid.  Set Aside.
  • In the same pan add oil to the pan and sauté your onion, celery, jalapeno and pepper.  Cook till soft.
  • Add in your tomato paste and garlic.  Cook for 1 minute.  
  • Add in all your canned ingredients & stir until combined.
  • Add in your sweet potatoes and spices. (NOTE:  Leave out your salt until halfway through cooking as canned food can be salty.)  Taste halfway through and salt to your liking.  
  • In the last 20 minutes, add in your squash (you want them cooked & crisp, not soggy.)  
  • NOTE 1:  All ingredients can be removed or add in new veggies. 
  • NOTE 2: Add Topping ideas to your liking.
  • NOTE 3: Can add chicken Broth to thin it out.
