Veggie Juice Chili

"This delicious chili is made with vegetable juice as its base - so it is healthier than your average chili but you would never know it since it is so rich and flavorful. This recipe has been handed down from friend to friend for many years. Enjoy!"

Vegetable juice blend 32 ounces, 2 cans, 2 cans, 2 cans, 2 medium, 1 green pepper, 3 TBS, 1.5 TBS, To taste, 2 TBS
Petite diced tomatoes with juice
Chili beans (seasoned - medium, with juice)
Kidney beans with juice
Onions - diced
Green pepper - diced
Chili Powder
Salt & Pepper
Vegetable oil


Heat the vegetable oil in a large pot or dutch oven. Brown the diced onions and peppers until softened (approx. 5 minutes). Add all other ingredients and bring to a boil. Reduce to a simmer and cook covered for 90 minutes. Serve with shredded cheese, sour cream, crackers, or your favorite topping!
