Directions
Instructions:
- Heat olive oil in a large pot over medium heat. Add diced onions and cook until softened.
- Add minced garlic and cook for another minute until fragrant.
- Add ground beef to the pot, breaking it apart with a spoon. Cook until browned.
- Stir in chili powder, cumin, smoked paprika, oregano, cinnamon, salt, and pepper. Cook for 2-3 minutes to allow the spices to bloom.
- Pour in the red wine, scraping the bottom of the pot to release any browned bits. Let it simmer for a few minutes to reduce.
- Add diced bell pepper, black beans, kidney beans, diced tomatoes (with their juice), and tomato paste. Stir to combine.
- Cover the pot and let the chili simmer on low heat for about 30 minutes, allowing the flavors to meld.
- Add the chopped dark chocolate to the chili and stir until it melts and is well incorporated.
- Taste and adjust the seasoning if needed. If the chili is too thick, you can add a bit of water or more wine.
- Serve hot, topped with shredded cheese, sour cream, and chopped green onions if desired.
