Turkey Chili Stuffed Peppers

"I was looking for a way to incorporate more turkey in my diet. I also love spicy foods so I combined my chili recipe with my stuffed peppers recipe and it worked great. As this is made with turkey instead of beef, the wine should not be too bold. Black Box Pinot Noir is a light-bodied red wine and it's fruity which offsets the heat of the dish."

Ingredients

Olive oil 2 T, 1 C., 2 lbs., 4, 2, 2 10 oz. cans, 1/2 c., 6, 1 cup
Chopped onion
Ground turkey
Minced garlic cloves
Chili seasoning packets
Diced tomatoes with green chiles
Chopped Jalapeno Peppers, deli-sliced tamed style
Red bell Peppers
Shredded Pepper Jack Cheese

Directions

In a medium saucepan, heat oil and add onion. Cook on medium heat until onion is browned, then stir in garlic and cook an additional 2 minutes. 
Add in turkey to onion garlic mixture and cook until turkey is no longer pink.
Lower heat and stir in seasoning packets, diced tomatoes with juice, and jalapenos. Cook for 8 minutes, remove from heat.  
Cut tops off the red peppers and remove seeds from center. Using a slotted spoon, fill peppers with turkey mixture, then stand filled peppers in air fryer basket.
Air fry 375 degrees for 7 minutes. Top with cheese and air fry until cheese is melted, about two minutes.
Notes: for ease of preparation, I like to use pre-made minced garlic.
If diced tomatoes with green chilies are not available, you can substitute one and a half cans of 14oz. diced tomatoes and 4 T. canned chopped green chiles.
