Directions
Instructions:
- In a large pot or Dutch oven, heat olive oil over medium heat. Add the chopped onions and garlic, sautéing until they become translucent.
- Add the ground beef to the pot and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the diced green peppers and continue to cook for another 3-5 minutes until the peppers start to soften.
- Pour in the red wine, stirring to deglaze the bottom of the pot. Allow the wine to simmer for a couple of minutes, reducing slightly.
- Add the crushed tomatoes, kidney beans, black beans, tomato paste, chili powder, cumin, paprika, dried oregano, cayenne pepper, cocoa powder, and coffee. Stir well to combine.
- Bring the chili to a simmer, then reduce the heat to low, cover, and let it simmer for at least 1-2 hours.
- Adjust the seasoning to taste. If you prefer a thicker chili, you can let it simmer uncovered for the last 30 minutes.
- Serve the chili hot, topped with shredded cheddar cheese, a dollop of sour cream, chopped green onions, fresh cilantro, and a sprinkle of dark chocolate shavings for an unexpected, luxurious touch.
This unique twist adds a subtle chocolatey undertone and a hint of coffee, making your chili stand out with a complex and intriguing flavor profile. Enjoy the deliciously distinctive result!
