Thanksgiving Chili
"The old standby with post-Thanksgiving leftovers. All you need is turkey, corn, beans, seasoning, and leftover pumpkin."

1 lb shredded turkey | 1 lb, 2 cans (12-14 oz each), 1 can, 1 can, 1/2, chopped, 1 tbsp, 3/4 cup, 1/2 cup, 1 tbsp, 1 tsp, to taste |
2 cans diced tomatoes | |
1 can white beans, drained | |
1 can chili beans, drained | |
red onion | |
olive oil | |
corn | |
pumpkin puree | |
chili flakes | |
cumin | |
salt and pepper |
Directions
Saute chopped onion and olive oil in pan. Add shredded turkey until browned. Add tomatoes, beans, cumin, chili powder, corn, and pumpkin. Simmer at low heat for up to one hour. Add salt and pepper to taste. Garnish with green onions and shredded cheese, if desired.
