1 tablespoon olive oil

1 large onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 jalapeno pepper, finely chopped (seeds removed for less heat)

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

1 can (14.5 oz) diced tomatoes

2 cups vegetable broth

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) pinto beans, drained and rinsed

Salt and pepper to taste

Optional toppings: shredded cheddar cheese, chopped green onions, sour cream, avocado slices, cilantro

Instructions:

1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook until softened, about 5 minutes.

2. Add minced garlic, diced bell peppers, and jalapeno pepper to the pot. Cook for another 5 minutes, until the peppers are slightly softened.

3. Stir in chili powder, cumin, smoked paprika, and cayenne pepper. Cook for 1-2 minutes until fragrant.

4. Add diced tomatoes (with their juices) and vegetable broth to the pot. Stir to combine.

5. Bring the mixture to a simmer and let it cook for about 15 minutes, stirring occasionally.

6. Add the drained and rinsed black beans, kidney beans, and pinto beans to the pot. Stir well to combine.

7. Allow the chili to simmer for an additional 10-15 minutes, until the flavors have melded together and the chili has thickened to your desired consistency. Season with salt and pepper to taste.
