Ground Beef, 15% or 20% fat
Bacon, cooked until crispy and crushed into pieces
Bacon grease, from bacon
Olive Oil
Jalapeno Peppers, diced
Yellow Onions, diced
Garlic, peeled and minced
McCormick's Hot Chili Seasoning
McCormick's Chili Seasoning
Tomato Paste
Pasta Sauce (like Prego Roasted Garlic and Herb)
Chicken Broth
Kidney Beans, drained, not washed
Pinto Beans, drained, not washed
Hershey's Milk Chocolate Chips
Salt
Favorite Vinegar Based Hot Sauce (like Ernest Hemmingway Bull Sauce)

Directions

  1. Begin by frying bacon until very crispy. Remove grease during cooking and cook low and slow for about 20 min. The lower and slower the better. Save 3 tbsp of bacon grease for later. Set bacon aside and once cooled, crush into pieces.
  2. In a pot on medium-high heat, add olive oil, onions, and pinch of salt. Cook for 2-3 min. 
  3. Add jalapenos and cook additional 2-3 min.
  4. Add garlic and cook until fragrant, about 1 min.
  5. Add ground beef, sausage, and a few pinches of salt, chopping into pieces will cooking. Cook until about 50% of pink is gone, about 3-5 min.
  6. Add McCormick’s Chili Seasoning. If you want a people pleaser with a kick, add as specified in the ingredients. If you want it extra spicy (as we do), add 7 oz of spicy seasoning only.
  7. Keep cooking until meat is about 80-90% pink, about 2-3 min.
  8. Add tomato paste, pasta sauce, chicken broth, kidney and pinto beans, bacon grease, Hershey’s milk chocolate chips, and your favorite vinegar based hot sauce.
  9. Mix all ingredients and reduce temperature to a simmer.
  10. Simmer, stirring occasionally, for 1.5 hours.
  11. Add bacon pieces and simmer for additional 10 minutes.
  12. Serve with sour cream, cheddar cheese, green onions, and hot sauce as desired.
