Directions
- Begin by frying bacon until very crispy. Remove grease during cooking and cook low and slow for about 20 min. The lower and slower the better. Save 3 tbsp of bacon grease for later. Set bacon aside and once cooled, crush into pieces.
- In a pot on medium-high heat, add olive oil, onions, and pinch of salt. Cook for 2-3 min.
- Add jalapenos and cook additional 2-3 min.
- Add garlic and cook until fragrant, about 1 min.
- Add ground beef, sausage, and a few pinches of salt, chopping into pieces will cooking. Cook until about 50% of pink is gone, about 3-5 min.
- Add McCormick’s Chili Seasoning. If you want a people pleaser with a kick, add as specified in the ingredients. If you want it extra spicy (as we do), add 7 oz of spicy seasoning only.
- Keep cooking until meat is about 80-90% pink, about 2-3 min.
- Add tomato paste, pasta sauce, chicken broth, kidney and pinto beans, bacon grease, Hershey’s milk chocolate chips, and your favorite vinegar based hot sauce.
- Mix all ingredients and reduce temperature to a simmer.
- Simmer, stirring occasionally, for 1.5 hours.
- Add bacon pieces and simmer for additional 10 minutes.
- Serve with sour cream, cheddar cheese, green onions, and hot sauce as desired.
- Keep life spicy 🙂
