Southwest Kickin Chicken chili
"My own twist on a basic Southwestern style chicken or turkey chili that I had on an Arizona vacation."

Olive oil | 1 table spoon, 1 pound, 1 teaspoon, 1 teaspoon, 2, 1 cup, 1 can, 1 can |
boneless skinless chicken (or turkey)breasts, cut into 1/2-inch cubes | |

whole bay leaves | |
water | |
diced tomatoes, undrained | |
(15 to 16 ounces) white beans, undrained |
Directions
1. Heat oil in large skillet on medium-high heat. Add chicken (or turkey); cook and stir 3 to 5 minutes or until no longer pink.
2. Stir in seasonings, tomatoes ,water and beans. Bring to boil. Reduce heat to low; cover and simmer 30 minutes or until chicken is cooked through. Serve with desired toppings such as plain yogurt, shredded cheese or cilantro.
