Smoked White Chicken Chili

"Family and friends have always loved my white chicken chili. But when I started smoking the chicken and the peppers it went to a different level, it became a showstopper. Using your favorite hardwood(apple for me) and fresh produce will make a smokey and spicy masterpiece that'll be hard to forget! Pair with red or white, Black Box Cab or Chardonnay will both work perfectly!"

white beans
Sweet corn
anaheim peppers

Directions

  1. Smoke the Chicken and pepper with your favorite hardwood.  Shred chicken, slice and sead peppers, then set aside.
  2. Saute the chopped onions and garlic in olive oil.  Add chopped smoked peppers, white beans(Great Northern or Cannalleni), sweet corn, salt, pepper, and other seasonings. Bring to a simmer.  
  3. Add chicken stock, hot sauce, worcestershire, cream cheese, sour cream.  Bring to a boil then cook over low heat for 1 hour and stir regularly.  
  4. Finally add your shredded smoked chicken and top with some fresh cilantro.   
  5. Serve with tortilla chips and enjoy!
