Smoked Umami Chili

80/20 Ground beef 1 LB, 3 slices or 2-3 oz, 1/2 whole, 2 tbsp, 1/2 cup, 4, 1 whole, 2 cans, 2 tsp, 3 oz, 1 can, 1 can, 1 can, 2 tbs, 1 tsp, 2 tsp, To taste, To taste
smoked brisket, diced (preferably homemade or take-out from a BBQ restaurant
White onion, diced
neutral oil
Red wine
button mushrooms, diced
Yellow or red bell pepper, diced
Original Rotel
Trader Joe's Mushroom Umami seasoning
Tomato paste
Black beans, rinsed
Pinto beans, rinsed
dark kidney bean, rinsed
chili powder
onion powder
Garlic powder
Black pepper
Salt

Directions

Add oil to a pot over medium heat. Add diced onions & bell pepper and cook until soft. Add diced mushrooms and cook until all are slightly caramelized. Add 1/2 cup Red wine and stir until 1/2 of the wine has been absorbed. 

 

In the same pot add the ground beef. Add neutral oil as needed. Add the chili powder, onion powder and garlic powder. Add the Trader Joes Umami seasoning. Cook until the pink color leaves the meat. Salt and pepper to taste. 

 

Rinse the canned beans. Add the cans of Rotel to the pot. Add the canned beans. Add the tomato paste and stir together. 

 

If the pot of chili seems too thick, add small amounts of water until it resembles a stew consistency. To thicken, add more tomato paste. 

 

This is where you add the diced smoked beef brisket. Let this sit on a low setting with a lid on the stove for at least 30 minutes, this will allow the flavors to mingle.
