Directions

In a large pot, cook the bacon over medium heat until crisp. Remove bacon and set aside, leaving the grease in the pot.

Add the ground beef to the pot and brown it, breaking it up with a spoon, about 5 minutes.

Add the diced onion and minced garlic to the pot with the beef, and cook until the onions are translucent.

Stir in the diced tomatoes, tomato sauce, kidney beans, black beans, beef broth, chili powder, smoked paprika, and ground cumin. Bring to a simmer.

Let the chili simmer, uncovered, for about 30 minutes, stirring occasionally.

Stir in the cooked bacon and smoked cheddar cheese until the cheese is melted and well incorporated.

Season with salt and pepper to taste.

Serve hot, garnished with fresh cilantro.
