Rotel
Diced Onion
tomato sauce
Low-sodium beef or vegetable broth
Kidney beans, drained
Chili Powder
Cinnamon
Fresh minced garlic
Paprika
Ground cayenne
Ground cumin
Ground nutmeg
Salt to taste
Black pepper to taste
Shredded cheddar cheese
Sour cream

Directions

  1. Add ground beef to large slow cooker/Crockpot. Use a spatula to break up the meat for easier cooking.
  2. Add Rotel, tomato sauce, diced onion, kidney beans, chili powder, cinnamon, garlic, paprika, cayenne, cumin, nutmeg, salt, pepper, and broth. Stir well to combine.
  3. Cover and cook on low for 6-8 hours. Once cooked, stir well.
  4. Serve immediately and top with shredded cheddar cheese, more diced onion, and sour cream, or serve in baked potatoes or over spaghetti.
