Savory Maple Bacon Chili

  • 1 lb ground beef
  • 6 slices of bacon, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1/4 cup maple syrup
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions, diced avocado

  1. In a large pot or Dutch oven, cook the diced bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon grease in the pot.

  2. Add the ground beef to the pot and cook until browned, breaking it apart with a spoon as it cooks.

  3. Add the diced onion, minced garlic, and diced bell peppers to the pot. Cook until the vegetables are softened, about 5 minutes.

  4. Stir in the chili powder, cumin, smoked paprika, salt, and pepper, and cook for another 2 minutes until fragrant.

  5. Add the diced tomatoes, tomato paste, kidney beans, black beans, and beef broth to the pot. Stir to combine.

  6. Bring the chili to a simmer, then reduce the heat to low and let it simmer uncovered for 30-40 minutes, stirring occasionally, until the flavors have melded together and the chili has thickened to your desired consistency.

  7. Stir in the maple syrup and cooked bacon, and let the chili simmer for another 5 minutes to allow the flavors to marry.

  8. Taste and adjust seasoning if necessary.

  9. Serve the chili hot, garnished with your choice of toppings like shredded cheese, sour cream, chopped green onions, or diced avocado.

Wine Pairing:

This savory maple bacon chili pairs beautifully with a medium-bodied red wine such as Black Box Merlot. The slight sweetness from the maple syrup complements the fruity notes in the wine, while the smoky bacon and spices enhance its complexity.
