Directions

Cook the onions and garlic: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent (approx. 5 minutes). Add the garlic and cook for another minute.
 
Brown the chicken: Add the diced chicken to the pot, and season with cumin, oregano, cayenne, salt, and pepper. Cook until the chicken is browned on all sides.
 
Add beans and broth: Stir in the white beans, chicken broth, and green chilies. Bring the mixture to a boil, and then reduce the heat and simmer for about 30 minutes — or until the chicken is tender and the flavors meld.
 
Add corn and cream: Stir in the corn and heavy cream. Continue to simmer for another 10 minutes, until the chili is heated through and slightly thickened.
 
Garnish and serve: Remove from heat, and stir in chopped cilantro. Adjust seasonings if needed. Serve hot.
