RosieRozzz Chili

"This is a classic chili recipe "RosieRozzzed" up! I use your usual veggies, kidney beans, ground beef etc... I add my own twist of: roasting the garlic, the onions, and the jalapeno peppers. Then folding it all in the chili at the end. It takes a little more time, but it creates a different taste/texture, and it's so worth it. Also instead of a meat stock, I use a beef consumme, to create a richer flavor. And last, I use a can of whole plum tomatoes, that I hand crush myself for imperfect chunky texture. Enjoy!"

Ground Beef, Kidney Beans, Beef Consumme, Whole Plum Tomatoes, Tomato Sauce, Tomato Paste, Garlic, Jalapeño Peppers, Orange Bell Pepper, Red Onion, Worcester Sauce, Chili Powder, Cayenne Pepper Cumin, Black Garlic, Red Pepper Flakes, Olive Oil 2 lbs Ground Beef, 16 oz. Kidney Beans, 10.5 oz. Beef Consumme, 28 oz. can of Whole Plum Tomatoes, 15 oz. Tomato Sauce, 2 tsp Tomato Paste, 5 cloves of Garlic, 3 Jalapeño Peppers, 1 Orange Bell Pepper, 1 Red Onion, 1 tbsp of Worcestershire Sauce, 2 tbsp Chili Powder, 1 tsp Cayenne Pepper, 1 tsp Cumin, 1 tsp Black Garlic Powder, Sprinkle of Red Pepper Flakes, 2 tbsp Olive Oil, and Salt & Pepper to taste.


Oven Roast garlic and jalapeños in separate containers. Roast about 30 minutes. On stovetop, in a large pot, sauté diced orange bell peppers, diced red onions for about 5 minutes. Stir in tomato paste, saute for about 3 more minutes. Put pot to the side. In a medium pan, sear the ground beef for about 5 minutes. Season with salt and pepper. Drain. Add ground beef to the large pot with bell peppers and onions. On a low heat, add beef consumme, worcestershire sauce, chili powder, cayenne, cumin, black garlic, and red pepper flakes. Stir well and cook on low for about 15 minutes. Hand crush tomatoes in a bowl to the side. Add the hand crushed and tomato sauce to large pot, cook for another 15 minutes. Add beans, simmer and cover. Simmer for about 25 minutes. Turn off. Let stand for about 15 minutes. Fold in roasted garlic and jalapeños. Stir well and salt/pepper to taste.
