Revolutionary Chili

"As a Massachusetts native, my family embraces the cold winter, and enjoys 'Revolutionary Chili', a nod to our shared history. A hearty blend of ground beef, sausage, beans and a few other surprising flavors to spice up the long New England winters. A family favorite that is enjoyed by all."

Directions

In a large pot or dutch oven over medium-high heat, cook the ground beef and Italian sausage until browned and crumbly. Drain excess fat.

Add the onions and garlic and cook for 2-3 minutes until fragrant.

Stir in the chili powder, cumin, smoked paprika, oregano, and cayenne. Cook for 1 minute to toast the spices.

Pour in the crushed tomatoes, kidney beans, green chilies, Worcestershire sauce, and beef broth. Season with salt and pepper to taste.

Bring the chili to a boil, then reduce heat and simmer for 30-45 minutes, stirring occasionally, until thickened to your desired consistency. The longer it simmers the richer the flavors.

Adjust seasonings as needed before serving. Garnish with shredded cheese, sour cream, avocado, etc if desired.

Wine Pairing Notes: The rich and hearty flavors of this chili pair beautifully with the bold tannins and dark fruit notes of a Cabernet Sauvignon like Black Box. The wine’s acidity cuts through the richness of the chili, while its concentrated flavors of black cherry, plum, and spice complement the Southwestern spices and smoky undertones in the dish. The chili’s umami notes from the beef, sausage, and Worcestershire enhance the wine’s savory qualities.
