Nikki’s Vegan Instant Pot Chili Beans

We needed a hearty vegetarian chili that wasn't meat-based, that was satisfying and rich, but that was quick and easy to prepare. Anaheim chili peppers, seeded and chopped
Sweet onion, chopped

Dried pinto beans or bean blend
Organic vegetarian bacon bits
Vegetable broth
Canned diced tomatoes
Canned chipotle peppers, chopped

Directions

  1. Rinse and sort beans, set aside (no soaking necessary when using a pressure cooker)
  2. Using a blend of olive oil and avocado oil, saute onions, garlic, and both types of chili peppers in Instant Pot on saute setting.
  3. Combine all remaining ingredients in instant pot, EXCEPT for canned tomatoes, lemon juice, and salt.
  4. Turn off “keep warm” setting.
  5. Use “high” pressure cooker setting for 60 minutes
  6. Let rest 20 minutes before releasing steam.
  7. After 20 minutes, release steam
  8. Stir well, add diced tomatoes, lemon juice, and salt to taste. (Salt is sometimes not necessary depending on what broth you use; careful not to overdo it.)
  9. Use pressure cooker setting “high” for 15 more minutes.
    NOTE: Watch the pot on the second run of pressure cooking! If it gives you a “burn” alert, turn off the pressure cooker and allow it to sit for 30 minutes. It will self-cook the rest of the way even without pressure.
  10. Serve hot with a selection of toppings.
