Nikki’s Vegan Instant Pot Chili Beans
"This recipe evolved over a number of years when our chili-loving family became vegetarian. We needed a hearty vegetarian chili that wasn't meat-based, that was satisfying and rich, but that was quick and easy to prepare. My beans have since become a family staple and when family comes to visit, these chili beans are always waiting."

Directions
- Rinse and sort beans, set aside (no soaking necessary when using a pressure cooker)
- Using a blend of olive oil and avocado oil, saute onions, garlic, and both types of chili peppers in Instant Pot on saute setting.
- Combine all remaining ingredients in instant pot, EXCEPT for canned tomatoes, lemon juice, and salt.
- Turn off “keep warm” setting.
- Use “high” pressure cooker setting for 60 minutes
- Let rest 20 minutes before releasing steam.
- After 20 minutes, release steam
- Stir well, add diced tomatoes, lemon juice, and salt to taste. (Salt is sometimes not necessary depending on what broth you use; careful not to overdo it.)
- Use pressure cooker setting “high” for 15 more minutes.
NOTE: Watch the pot on the second run of pressure cooking! If it gives you a “burn” alert, turn off the pressure cooker and allow it to sit for 30 minutes. It will self-cook the rest of the way even without pressure. - Serve hot with a selection of toppings.
