Mom’s Chili

"My mom would make this every year for Halloween so that we would have a hot, hearty meal before going out trick-or-treating. I looked forward to coming home to the smell of the spicy chili."

diced onion
green pepper
celery
garlic clove
ground beef
canned tomatoes
chili powder
cold water
salt
sugar
cooked or canned red kidney beans

Directions

Toast the chili powder (for more flavor depth).

Melt shortening in large pot.  Add onion, green pepper, celery and garlic.  Cook until partially tender, stirring constantly.  Add beef and fry uncovered until browned.  Mix chili powder with the cold water and add to pot.  Add salt and sugar.  Cover and bring to a boil, then simmer for 1 hour until thickened.  Add beans and heat well.
