Momma’s chili

"I have changed the variations of this recipe over the years, and now to this one because I have had to lose 100 lbs, in order to have back surgery I needed so badly. It is delicious, healthy, and filling.,"

1/3 lb. ground beef 1/2 cup diced sweet potato fresh or frozen, 1/2 cup sliced mushrooms, 1 can mild spicy chili beans, 1 can spicy V8 juice, 1 diced jalapeno without seeds, salt and pepper to taste
1/2 cup diced onion
1. TBSP tomato paste
1 can black beens
1 can regular V8 juice
1 cup shredded cheddar cheese


In large dutch oven, place sweet potato, onion , jalapeno and mushrooms along with ground beef and beef stock, salt and pepper. stir till beef is done, and ground fine. use a potato masher to smash the sweet potatoes and mushrooms. stir in tomato paste and cook for another minute stirring. Then add both cans of beans and both cans of V8 juice. Stir till well mixed, taste and re-add salt and pepper to taste. Cook on low for at least 1 hour, or longer if desired.

Add shredded cheese to  bowl when serving
