Miso Butter Pork Ramen Chili

"My pork chili is rich in umami flavors which have slightly sweet, salty and spicy. To make my chili taste more delicious, I cooked pork and vegetables in butter then added more butter for finishing. I added fried ramen noodles to add another texture which makes this chili more fun to eat. Nice crisp semi sweet white wine goes well with my chili so I pair with Black Box Pinot Grigio. Enjoy this chili with chilled Pinot Grigio!"

Brown sugar
Soy sauce
Chili powder
Ground cumin
Crushed red pepper
Salt
Ground black pepper
Water
Large cloves garlic
Unsalted butter
Ground pork
Sweet onion, chopped
Garbanzo beans, rinsed and drained
Cannellini beans, rinsed and drained
Diced tomatoes
Instant ramen noodles (seasonings attached to the package are not used)
Vegetable or canola oil

Directions

  1. In a bowl, mix together miso, brown sugar, soy sauce, chili powder, cumin, crushed red pepper, salt, black pepper and 1/2 cup of water.
  2. Peel and mince garlic.
  3. Melt 1 tablespoons of butter in a large pot over medium heat. Add ground pork, garlic and onion, and cook stirring until pork is browned.
  4. Add diced tomatoes with the juice, both beans and 1 cup of water to the pot. Bring to a boil. Reduce heat to low, then stir in miso mixture until miso mixture is dissolved. Cook for 30 minutes stirring occasionally.
  5. In the meantime, heat enough oil to fry ramen noodles in a deep frying pan over medium-high. Work in batches. Crush ramen noodles roughly and put some of the noodles into the hot oil. Fry ramen noodles stirring until golden brown. Drain on paper towels. Repeat this until all noodles are fried.
  6. After 30 minutes, turn off the heat and stir in 3 tablespoons of butter until butter melts.
  7. To serve, put chili in serving bowls. Top with fried ramen noodles and chopped green onions for garnish.
