– 1 lb ground beef

– 1 can (15 oz) red kidney beans, drained and rinsed

– 1 large red onion, finely diced

– 3 cloves garlic, minced

– 1 can (14 oz) diced tomatoes

– 1 can (6 oz) tomato paste

– 2 tsp chili powder

– 1 tsp cumin

– 1/2 tsp paprika

– 1/2 tsp oregano

– Salt and pepper to taste

– 1 cup beef or vegetable broth

– 2 tbsp olive oil

– 1 cup red wine (such as Black Box Cabernet Sauvignon or Merlot)

Instructions:

1. Heat olive oil in a large pot over medium heat. Add finely diced red onion and minced garlic, sauté until softened.

2. Add ground beef and cook until browned, breaking it apart with a spoon.

3. Stir in chili powder, cumin, paprika, and oregano. Cook for another minute.

4. Add diced tomatoes, tomato paste, and drained red kidney beans. Mix well.

5. Pour in the red wine and beef or vegetable broth. Bring to a simmer. Season with salt and pepper to taste.

6. Reduce heat to low, cover, and let it simmer for at least 45 minutes to an hour, allowing the flavors to meld.

7. Adjust seasoning if necessary before serving.

8. Serve hot, optionally topped with shredded cheese, sour cream, and chopped green onions.
