Mahogany Short Rib Chili

"I created this chili a few years ago when I wanted to impress my then-boyfriend. I served this upscale version of chili to him on a date night, accompanied with Black Box Cabernet Sauvignon. He loved it, and it must have knocked his socks off because we're now married! The rich, bold, flavorful short rib chili pairs well with Black Box's Cabernet Sauvignon. The chili itself also contains secret ingredients such as cabernet sauvignon, ancho chiles, soy sauce and brown sugar."

boneless short ribs
kosher salt
finely chopped red onion
finely chopped red bell pepper
minced garlic
bay leaves
Black Box Cabernet Sauvignon
soy sauce
dark brown sugar
(15 ounce) cans dark red kidney beans
(15 ounce) can
beef broth
cayenne pepper

Directions

Heat a large pot over medium heat; sear ancho chiles 2 minutes per side or until blistered.  Remove chiles from heat and remove stems and seeds; set aside.

Heat 1 tablespoon olive oil in pot over medium heat. Season short ribs with 1 teaspoon salt; sear in pot 2-3 minutes per side (may need to work in batches) or until golden.  Transfer short ribs to a plate.

Heat additional 2 tablespoons olive oil in pot; stir in onion, red pepper, garlic, bay leaves, and cook 8 minutes or until golden and softened.

Stir in ancho chiles, short ribs, Cabernet Sauvignon, soy sauce, brown sugar, kidney beans, tomato sauce, beef broth, cayenne pepper, and additional 1 teaspoon salt until well combined.  Bring mixture to a boil; reduce heat to low, cover, and simmer 3 hours.

Every 30 minutes of cooking, skim off some of the fat that gathers at the top of chili.  Afterwards, give chili a good stir.

After 3 hours of cooking , remove ancho chiles and bay leaves from chili. Ladle into bowls, top with your favorite chili toppings, and serve!
