Hearty Chili

"I’ve been a chili fan for what feels like my entire life. Usually, I grab some seasoned beans or a packet and proceed from there. Figuring out a ‘from-scratch’ recipe was fun, yet daunting. I started with the meat, beans and tomatoes - they were the easiest part. I knew cumin would be involved, as it is my favorite of the spices, along with chili powder. The quantities and additional seasonings were the fun and most challenging pieces. The final recipe incorporated my varied attempts and feedback from my family. Enjoy!"

extra virgin olive oil 2 Tbsp, 2 each, 1 each, 1 each, 6 each, 2 1/2 pounds, 4 Tbsp, 1/2 tsp, 1 Tbsp, 1 Tbsp, 45 oz, 28 oz, 28 oz, 10 oz
medium yellow onion, finely chopped
jalapeno pepper, seeded and finely diced
bell pepper, seeded and finely chopped
garlic cloves, minced
ground chuck
chili powder
cayenne pepper
canned dark kidney beans, drained and rinsed
canned crushed tomatoes
canned diced fire roasted tomatoes
canned diced tomatoes and green chilies


  1. in a large pot heat the oil until just shimmering, add onion, reduce heat to medium-low and cook until almost soft, about 5 minutes
  2. add the peppers and garlic, cook another 5 minutes until softened
  3. increase heat to medium, add ground chuck and brown, remove from heat and drain excess fat
  4. place drained ingredients in a 6 qt slow cooker and add remaining ingredients, stir to combine
  5. cover and cook on low heat setting 8 to 9 hours
