cloves of garlic
bell pepper, diced
black beans, drained and rinsed
pinto beans, drained and rinsed
diced tomatoes with green chilies
frozen corn kernels
beef broth
tomato paste
chili powder
Ground cumin
smoked paprika
salt and black pepper
Olive Oil


In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and cook until softened.

Add the minced garlic and diced bell pepper. Sauté for 2-3 minutes until the vegetables are tender.

Add the ground beef and cook until browned, breaking it apart with a spoon.

Drain any excess fat from the pot.

Stir in the chili powder, ground cumin, smoked paprika, and cinnamon. Cook for 1-2 minutes to enhance the flavors.

Add the diced tomatoes with green chilies, black beans, pinto beans, frozen corn, beef or vegetable broth, and tomato paste. Stir well to combine.

Season with salt and black pepper to taste.

Bring the chili to a simmer and let it cook for 15-20 minutes to allow the flavors to meld.

Taste and adjust the seasonings if needed.

Serve the chili hot, garnished with avocado slices, shredded Monterey Jack cheese, chopped cilantro, and lime wedges.
