Festive Beef ‘n Brie Chili

"This chili is delicious and full of surprises. Quality beef adds moisture and depth of flavor. It was a perfect pair for adding rich and smooth Cabernet Sauvignon to blend the other ingredients together. Spices, colorful. peppers, and black beans add texture and swirls of new tastes. It’s a chili that mild or hot pepper lovers would enjoy. For each bowl, I decided to add a fancy touch, a small round of brie cheese and chili crisp. To make it an eye popper, I top each bowl with one of those oh, so popular crisp onion rings."

1 Tablespoon chili powder 2 teaspoons cumin, 1/2 teaspoon salt, 3 slices smoked bacon, 1 cup chopped mixed colors bell peppers, 1-1/2 pounds grass fed ground beef or wagyu blend beef, 1/2 cup Black Box Cabernet Sauvignon wine, 1 cup medium tomato salsa, 2 Tablespoons light brown sugar, 1/3 cup chopped fresh cilantro or parsley, 1 to 1-1/2 ounces brie cheese, trimmed, sliced, .
1 teaspoon oregano
1/2 teaspoon ground black pepper
1 cup chopped red onion
2 garlic cloves, minced
1 to 1-1/2 cups beef broth, divided
1/2 cup tomato sauce
1 (15 oz.) can black beans with liquid (aquafaba)
Salt and ground black pepper to taste
4 to 6 frozen deep fried onion rings, baked
1 to 1-1/2 teaspoons chili crisp optional or as desired

Directions

  • Black Bean Beef Chili

  • In a small bowl, combine the chili seasonings: chili powder, cumin, oregano, salt, black pepper.
  • Add bacon to a medium stock pot; cook over medium high heat until browned; remove cooked bacon to plate, cool; crumble.
  • Stir onions, and peppers into bacon drippings in stock pot; sprinkle with 2 teaspoons reserved chili seasoning; cook until translucent, add garlic, cook for 1 minute; add bacon pieces, ground beef, crumbling the large pieces; sprinkle with 1 teaspoon chili seasoning, cook until meat is browned about 10 minutes. (Remove any excess fat if needed)
  • Add 1 cup beef broth and wine; stir to combine, add tomato sauce, tomato salsa, black beans with liquid, and the remaining chili seasoning; bring to a boil, partially cover; reduce heat to low, simmer for about 25 minutes; stir in brown sugar, season with salt and black pepper to taste, and add additional beef broth as needed. Cook to blend flavors for 5 to 10 minutes. Stir in half of chopped fresh cilantro.

For Onion Ring Garnish:

  • For topping with onion rings, bake frozen onion rings on parchment lined baking pan in 425 degrees F. oven for 6 minutes; turn over bake for 5 to 6 more minutes until light brown and crisp. Set aside.
  • For Garnish: Flatten 1/4 oz. pieces of brie into small rounds. Place chili in bowls, place brie in center; top with about 1/8 to 1/4 teaspoon chili crisp, place a crisp onion ring over the cheese. Sprinkle the chili with cilantro leaves.

Yield: Serves 4 to 6
