Elevated Comfort: Kimchi Grilled Cheese

Kimchi Enough to create full layer on your bread of choice. Increase quantity to desired amount., 2 Slices, 2 Slices (or to preference), To taste and preference, 1.5 tbsp (or more if needed to thoroughly cover bread of choice)
Bread of Choice (I recommend sourdough or a thick white bread)
Additional Cheeses of Choice (cheddar, gouda, pepperjack, etc.)
Butter (can also be replaced with mayonnaise)


  • Slice cheeses to your desired thickness and amount.
  • Butter (or apply mayonnaise to) one side of each piece of bread.
  • Form sandwich by layering cheese and kimchi between the two unbuttered sides of the bread.
    • (Note: Make sure to have cheese against both the top and bottom pieces of bread to avoid moisture in kimchi making bread too wet).
  • Cook in pan on low heat, covered, for 5-7 minutes.
  • After a few minutes, flip sandwich. Repeat this step until bread is desired level of golden brown and cheese is sufficiently melted.
  • Pair with your favorite soup!

You can also try adding your own variations, such as adding a fried egg on top for extra protein, or including additional vegetables, such as finely chopped scallions. However, make sure that the main ingredient is still cheese in order to maintain true grilled cheese quality!
