Sweet onion, diced
Jalapeno pepper, seeds removed, finely chopped
Pablano pepper, seeds removed, finely chopped
Fresh minced garlic
Smoked Pulled Pork
Black Beans with mild chili sauce
Kidney Beans, drained
Tomato sauce
Diced tomato
Chicken broth
Chili powder
Ground Cumin

Zest 1 Lime

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  1. Add diced sweet onion, chopped jalapeno pepper, and chopped poblano pepper to the pot. Sauté for about 5 minutes until the onions are softened.
  1. Stir in minced garlic and cook for an additional minute until fragrant.
  1. Add the smoked pulled pork to the pot and stir to combine with the onion mixture.
  1. Pour in the black beans with mild chili sauce, drained kidney beans, tomato sauce, diced tomatoes, and chicken broth.
  1. Season the chili with chili powder, ground cumin, ground coriander, smoked paprika, salt, and black pepper. Stir well to combine all the ingredients.
  1. Bring chili to a boil. Then reduce heat to medium low, cover, and let it simmer for about 20 minutes, stirring occasionally.
  1. While the chili is simmering, prepare the garnishes. In a small bowl, mix together sour cream, 1/4 cup of chopped cilantro, and zest and juice of 1 lime. Set aside.
  1. After the chili has simmered, taste and adjust seasoning if necessary.
  1. Serve the smoked pulled pork chili hot, garnished with a dollop of cilantro lime sour cream and a sprig of cilantro and a lime wedge.
