Ingredients

  1. 2 lbs. of ground chicken
  2. 1 box of frozen spinach
  3. 1 bag of small carrots chopped
  4. 2 onions chopped
  5. 4 celery stick chopped
  6. 1 green pepper
  7. ½ to 1 container of chopped mushrooms
  8. 6 full presses of garlic
  9. 1 cup of rinsed quinoa
  10. 1 can of red beans
  11. 1 can of cannellini beans
  12. 2 small cans OR one large can of dice tomatoes
  13. 1 cup of chicken broth, add more if needed
  14. 2 bay leaf
  15. 1 tablespoon oregano
  16. 1 tablespoon of basil
  17. 1 tablespoon of cumin
  18. 1 tablespoon of hot flakes
  19. 1 tsp. of coriander
  20. 1 tsp. of black pepper
  21. ½ tsp. of all spice
  22. ½ tsp. of nutmeg
  23. 1 tsp. of rosemary
  24. 1 tsp. of turmeric
  25. ¼ cup of lemon juice
  26. ¼ cup of vinegar

 

Directions

  1. Spray PAM in slow cooker
  2. Cook low heat for 6 hours

 

On the stove

  1. Brown meat in pan in some olive oil, then put in slow cooker
  2. Brown chicken in pan with the garlic in remaining olive oil then put in slow cooker
  3. Cook low for 9 hours
  4. Stir once in a while
