Directions

Ingredients:

  • Beef and Pork: 1 lb ground beef, 1 lb pork shoulder (cubed)
  • Vegetables: 2 onions (chopped), 4 garlic cloves (minced), 2 red bell peppers (diced)
  • Mushrooms: 1 cup wild mushrooms (chopped)
  • Tomatoes: 1 can (28 oz) crushed tomatoes, 2 fresh tomatoes (diced)
  • Beans: 1 can black beans, 1 can kidney beans (drained and rinsed)
  • Cabernet Sauvignon: 1 cup (plus more for drinking!)
  • Spices: 2 tbsp chili powder, 1 tbsp smoked paprika, 1 tsp cumin, 1 tsp oregano, 1/2 tsp cinnamon, Salt and pepper to taste
  • Chocolate: 2 squares dark chocolate (70% or higher)
  • Extras: Olive oil, Fresh cilantro, Sour cream, Shredded cheddar cheese

Instructions:

  1. Brown the Meats: In a large pot, heat olive oil over medium heat. Add the ground beef and pork shoulder, season with salt and pepper, and cook until browned. Remove meat and set aside.

  2. Sauté Vegetables: In the same pot, add onions, garlic, and bell peppers. Cook until softened. Add the mushrooms and cook for another 5 minutes.

  3. Deglaze with Wine: Pour in the Cabernet Sauvignon, scraping up any browned bits from the bottom of the pot. Allow to simmer until the wine is reduced by half.

  4. Add Tomatoes and Spices: Stir in crushed and fresh tomatoes, chili powder, smoked paprika, cumin, oregano, and cinnamon. Season with salt and pepper.

  5. Combine Ingredients: Return the browned meat to the pot. Add the black and kidney beans. Bring to a simmer.

  6. Simmer: Let the chili simmer, uncovered, for at least 1 hour. The longer it simmers, the more the flavors will develop.

  7. Finish with Chocolate: Stir in the dark chocolate until melted and integrated into the chili. This adds a unique depth of flavor.

  8. Serve: Garnish with fresh cilantro, a dollop of sour cream, and shredded cheddar cheese.
