Asian Short Rib Chili
"My family and I love chili, and are such fans of Asian food, that I knew I have to create a recipe with the consistency of a hearty chili, and the special flavors of Asian cuisine, by putting my unique spin on this dish with the flavor combinations that I used. Directions
Directions:
- Heat 2 tablespoons sesame oil in Dutch oven or large pot over medium heat.
- Add in minced garlic, 2 teaspoons chopped ginger, ¼ cup grated carrots, and 1 tablespoon chopped scallion; cook for 3 minutes. Add in ground short rib blend, ½ teaspoon salt, breaking meat up with wooden spoon, incorporating into vegetables, and cook until well done, (no longer pink) approximately 6 minutes.
- Stir in 1 tablespoon toasted sesame seeds, 2 teaspoons fennel seeds, ½ cup hoisin sauce, 1/3-1/2 cup sweet chili sauce, ¼ cup Pinot Noir, 1 cup vegetable broth, and 1 teaspoon sugar. Cover and cook on medium-low for approximately 45 minutes-1 hour.
- Stir in 1 cup edamame, spoon into bowls, and garnish with shaved carrots, toasted sesame seeds, and wonton strips. (If desired)
- Makes 4 servings, can be served with wonton strips on the side, if desired. (recipe can also be doubled)
- Pairs perfectly with Black Box Pinot Noir.
*Note – Ground short rib blend can be found in local markets/butcher; can also use fresh short rib blend burger patties and crumble up to cook.
